INGREDIENTS

Base:

  • 1 cup dates

  • 1 ½ cups walnuts

  • 3 tbsp raw cacao

  • 1 pinch of salt

Filling:

  • 300g silken tofu

  • 150g 85% dark chocolate

  • 3 tbsp maple syrup

  • Pinch of salt

STEP BY STEP:

  1. Prepare the Base:

    • Place dates, walnuts, raw cacao, and salt into a blender or food processor. Blitz until the mixture comes together.

    • Press the mixture firmly into a lined loaf tin or individual tart trays lined with mini cupcake liners.

    • Refrigerate to set while preparing the filling.

  2. Make the Filling:

    • Melt the dark chocolate in a microwave-safe bowl or over a pan of simmering water.

    • In a blender, combine silken tofu, maple syrup, a pinch of salt, and the melted chocolate. Blend until smooth and creamy.

  3. Assemble the Tart:

    • Spoon the chocolate filling over the prepared base, smoothing the top with a spatula.

    • Sprinkle with chopped salted nuts of your choice for added texture and flavour.

    • Chill in the fridge to firm up, then slice and enjoy!
