Apple Tart with Rose Water

INGREDIENTS
4 large apples thinly sliced
2 tbsp lemon juice
½ cup of coconut sugar
1 tsp ground cinnamon
½ tsp arrowroot
2 cup walnuts
2 tsp rose water
12 dates
¼ cup milled flaxseed
¼ tsp sea salt
STEP BY STEP
Set the oven to 160c
Line a 9inch loose bottomed flan tin with parchment
Soak the dates in 2 tsp rose water and ½ cup of hot water – leave for 30mins
Slice the apples really thinly and place in a large bowl
Add the lemon juice, coconut sugar, cinnamon and arrowroot and mix well. Set aside
In a blender add the walnuts and blitz until finely chopped
Then add the milled flaxseed and salt, blitz again
Now add the dates (without water at this stage) and blend until the mixture makes a ball, add another 1tsp of rose water and some of the date liquid if it seems dry
Press the pastry into the flan tin
Lay the apples in spiral shape around the tin
Bake in the oven for 35-40 mins
When it’s ready allow to cool slightly
Heat the remaining liquid from the apples in a pan to make a syrup to brush on the apple
Serve with coconut yoghurt
