Buckwheat Grout Granola
The brain is composed of 60% fat and contains high concentrations of cholesterol and polyunsaturated fatty acids such as Omega-3s.
These are vital for overall performance of the brain and if you are deficient then this can cause low mood and motivation and cognitive difficulties.
This granola is packed full of Essential Fatty Acids to support our brain health combine with a full fat greek yogurt or chia pudding for a well balanced breakfast.
INGREDIENTS
1 ½ cups buckwheat groats
¼ cup pumpkin seeds
¼ cup sunflower seeds
½ cup pecans, chopped
¼ cup shredded coconut
¼ cup coconut sugar
¼ cup maple syrup
2 tbsp coconut oil
1 ½ tbsp peanut butter
1 tsp cinnamon
¼ tsp sea salt
METHOD
Preheat the oven 160c
In a pan add the coconut oil, maple syrup, peanut butter and sugar, melt gentle
In a bowl add the buckwheat groats, seeds, pecans, coconut and cinnamon stir well
Add the wet ingredients to the dry and stir really well
Pour mixture onto a lined baking sheet and spread it out
Bake for 25 minutes or until golden
Allow to cool and store in a kilner jar for 2 weeks
Enjoy on it’s own with your favourite milk or as a topping for chia parfait & yoghurt
