Butter & Cannellini bean soup with sage

This recipe is fantastic for supporting gut health thanks to the 10 different plant ingredients it includes. The wider diversity of fibre-packed plants we include in our diet the happier our gut microbiome will be. Nuts, seeds, pulses, whole grains, fruits and vegetables are all packed full of nutrients that support a healthy gut. Garlic, onions, leeks are packed with particularly prebiotic that ‘good’ bacteria love and thrive on.

This soup is so comforting and nourishing and can be enjoyed through the cooler months to keep germs away. You can also switch the veggies with other seasonal stars.


Ingredients

  • 1 red onion, diced

  • 1 bulb fennel, diced

  • 2 sticks celery, diced

  • 2 carrots, diced

  • ½ courgette, diced

  • 1 sweet potato, diced

  • 4 cloves of garlic, grated

  • 2 bay leaves

  • 1 tbsp nutritional yeast

  • 1 litre vegetable bouillon

  • 1 heaped teaspoon dried oregano

  • ½ tsp dried sage

  • ¼ tsp chilli flakes

  • 1 can of butter beans, drained

  • 1 can of cannellini beans, drained

  • Pinch of black salt


METHOD

In a heavy based pan with lid heat 3 tbsp EV olive oil

Add the carrots, onions, fennel and celery to the oil and sweat until soft

Grate in the garlic and now add the sweet potatoes and courgettes, stir well

Add the oregano, sage, chilli flakes and nutritional yeast, stir and then pour in the stock and add the bay leaves

Bring to the boil, turn the heat down to a simmer, pop the lid on and cook for 10minutes

Now add the beans and heat through

Add a pinch of black salt and serve
