Courgette Pappardelle with Chilli & Cashews

Raw courgettes are one of my favourite ways to enjoy this spring veg and this salad is so quick to make and tastes super fresh and delicious.

Courgettes are typically harvested when they are still immature and small in size so they have a tender skin and a mild flavour, making them a versatile ingredient in many dishes.

They are low in calories and rich in nutrients, making them a popular choice for healthy recipes. These versatile veggies are packed with nutrients like vitamin C, vitamin A, potassium, and dietary fibre. They can help support digestion, promote healthy vision, and even contribute to a strong immune system.


INGREDIENTS

4 courgettes, cut in half & spiralised or made into ribbons using a peeler

1 lime, juiced

3 tbsp EV Olive oil

1 tsp chilli flakes

1 tsp sea salt

1/2 tsp black pepper

1 small bunch of basil, chopped

3 tbsp roasted cashews

1/2 cup of feta cheese, crumbled


METHOD

Spiralise or ribbon the courgettes and set aside

In a large salad bowl whisk together the lime juice, olive oil, chilli pepper, black pepper, salt and basil

Add in the courgettes and mix well

Scatter with roasted cashews and crumbled feta
