Halloumi & Salsa Verde Patties
These patties are packed full of protein and calcium which are both essential for joint and bone health.
The combination of eggs with the cheese means these patties are also rich in Vitamin D, one of the biggest missing components in bone health. Although calcium is the structural materials that our bones are made of, without the auxiliary nutrients that help it to do its thing, it is pretty useless. Vitamin D is vital for getting adequate amounts of calcium into the bloodstream.
Our primary source of vitamin D is the conversion of the cholesterol into Vitamin D precursors when the skin is exposed to UV radiation in sunlight. Unfortunately sunlight can be an issue in the UK so it is essential that w also look for as many dietary sources of vitamin D as possible.
These patties are simple to make and are a great vegetarian alternative to a burger, serve in a bun or rabbit style in a kale leaf. Kale is high in magnesium which is also important for a healthy skeleton. Magnesium plays a vital role in the way in which calcium is metabolised and utilised in our body.
INGREDIENTS
2 carrots, peeled and grated
1 courgette, grated
450g halloumi cheese, grated
½ red onion, finely diced
2 tbsp salsa verde (or 1 tbsp coriander & 1 tbsp mint)
2 free-range eggs, lightly beaten
4 tbsp GF breadcrumbs
Olive oil, for frying
Sea salt and freshly ground black pepper
METHOD
Mix together the grated carrots, courgettes and halloumi together in a bowl
Add the diced onion and salsa verde (or herbs)
Mix together well
Whisk the 2 eggs together and pour into the mixture, stir well
Add a good pinch of salt and freshly ground black pepper, breadcrumbs and mix together again
Leave to stand for 5 minutes before making into 10 patties, leave for another 15minutes before cooking
Heat olive oil in a large heavy based pan and fry each patty until brown, then turn and cook on the other side
Keep warm in the oven while waiting to serve
