Immune Boosting Tomato Soup with Bone Broth

INGREDIENTS

2 tbsp Extra Virgin Olive Oil

1 Onion (diced)

5 cloves of Garlic (crushed)

3 cloves of Aged Black Garlic (chopped)

1 Red Chilli (deseeded and halved)

1 Red Pepper (diced)

1 tsp Turmeric

1 tin of Chopped Tomatoes

2 Star Anise pods

1 tsp Smoked Paprika

500ml Beef Bone Broth - I used Freja foods bone broths but you can make your own or swap for chicken or mushroom broth


METHOD

Heat the extra virgin olive oil in a pot over medium heat.

Add the onion, garlic, black garlic, red chilli, red pepper, and turmeric. Gently sweat them until soft and fragrant.

Pour in the beef bone broth and chopped tomatoes, then drop in the star anise.

Simmer for 15 minutes, allowing all the flavours to meld beautifully.

Remove the star anise before serving. Enjoy!
