INGREDIENTS

Makes 16 Brownies

1 Cup Gluten free plain flour

1 ½ cup Granulated golden sugar

¾ cup raw cacao powder

½ cup coconut oil

1/3 cup oat milk (or any other non dairy milk)

60g crystallised ginger, chopped

160g 85% vegan chocolate chips or chopped into small chunks 

1 tsp GF baking powder

1 tbsp vanilla extra

¼ tsp sea salt 


METHOD

Preheat the oven to 175C

Line a square baking tin with baking parchment 9x9 or 8x8

Sift the flour, raw cacao powder, baking powder and salt together into a large bowl

Melt the coconut oil then pour into the sugar and whisk together with oat milk, vanilla extract

Fold wet into dry mixture, stirring well then stir in the ginger and chocolate chuncks

Pour into the tin and press into the corners

Bake for 25 minutes

Allow to cool completely before cutting into portions
