This Tahini, Oat & Quinoa Porridge is the perfect nourishing breakfast to warm your body when the mornings are still on the chilly side.

Packed with fibre-rich oats and protein-boosting quinoa, it offers sustained energy and gut support, while tahini brings healthy fats that help keep you feeling satisfied.

The warming spices—cinnamon, cardamom, and ginger—provide antioxidant and anti-inflammatory benefits, making them ideal for supporting immune health during autumn. Grated apples add natural sweetness and seasonal freshness, while a touch of kefir boosts probiotics, promoting a healthy gut as we transition into the colder season


INGREDIENTS

Serves 4

1 cups rolled oats
1 cup of quinoa, rinsed
4 cups of water
Pinch of sea salt
2 medium apples, grated
¼ cup tahini
½ tsp cinnamon
½ tsp ground cardamom
½ tsp ground ginger
4 Tbsp kefir
2 tbsp cocoa nibs
1tsp maple syrup or raw honey


METHOD

Bring the water to a boil and add the oats, quinoa and salt

Reduce the heat to medium, cover and simmer until the water is absorbed, the oats are tender, and the quinoa has opened about 20mins

After 15mins stir in the grated apples and spices and cook for the remaining 5mins

Remove from heat and stir in the tahini

Divide into 4 bowls and top with 1tbsp kefir, sprinkling of cinnamon. ½ tbsp cacao nibs and a drizzle of maple syrup. You can also add a dollop of Greek yoghurt!

If you have any left over, store in an airtight container for up to 3 days.  When you reheat it, add your choice of milk to a pan and beat in the oats to remove the lumps. Add your favourite toppings
