Roasted Rhubarb with Orange & Cardamon

There’s something so special about the arrival of rhubarb season — those vibrant pink stalks bring a tart freshness that's perfect for both sweet and savoury dishes. Today, I’m sharing a beautifully simple recipe for Roasted Rhubarb with Orange & Cardamom. It’s fragrant, lightly sweetened with maple syrup, and incredibly versatile.  This dish is perfect served over Greek yogurt or vanilla ice cream.​

🌿 Health Benefits of Rhubarb

Beyond its tart flavour and vibrant colour, rhubarb offers several health benefits:​

  • Bone Health: Rich in vitamin K, rhubarb supports bone strength and helps prevent osteoporosis. ​

  • Heart Health: The fibre in rhubarb aids in lowering LDL (bad) cholesterol levels, reducing the risk of heart disease. ​

  • Digestive Aid: Rhubarb contains compounds that act as natural laxatives, promoting healthy digestion.

  • Antioxidant Properties: Packed with antioxidants like anthocyanins, rhubarb helps combat oxidative stress and inflammation. ​

However, it's important to note that rhubarb is high in calcium oxalate, which can contribute to kidney stone formation in susceptible individuals.


INGREDIENTS

400g rhubarb, trimmed and cut into 3-inch pieces

6 cardamon pods

1 orange, zest and juice

½ cup of maple syrup

1 tsp vanilla extract


METHOD

Set the oven to 180c

Place the rhubarb into a baking dish and scatter the cardamon pods

Zest in the orange and pour over the juice and maple syrup

Roast for 20-25mins until tender

Enjoy on Greek yoghurt or vanilla ice cream
