Roasted Rhubarb with Orange & Cardamon

Today, I’m sharing a beautifully simple recipe for Roasted Rhubarb with Orange & Cardamom. It’s fragrant, lightly sweetened with maple syrup, and incredibly versatile. This dish is perfect served over Greek yogurt or vanilla ice cream.

INGREDIENTS
400g rhubarb, trimmed and cut into 3-inch pieces
6 cardamon pods
1 orange, zest and juice
½ cup of maple syrup
1 tsp vanilla extract
METHOD
Set the oven to 180c
Place the rhubarb into a baking dish and scatter the cardamon pods
Zest in the orange and pour over the juice and maple syrup
Roast for 20-25mins until tender
Enjoy on Greek yoghurt or vanilla ice cream
